Sautéed Penne with artichokes and mushrooms

INGREDIENTS (4 people)

  • 300 gr. Organic Penne
  • 500 gr. mushrooms
  • 300 gr. artichokes
  • 1 onion
  • 1 clove of garlic
  • 4 tablespoons of extra virgin olive oil
  • a knob of butter
  • ½ glass of dry white wine
  • 50 gr di pecorino grattugiato
  • Salt and Pepper (to taste.)

METHOD

In a pan, put extra virgin olive oil and butter, chopped garlic and onion, add the finely chopped artichokes and the porcini mushrooms, washed and cut into strips; brown everything and finally add the white wine, allowing it to evaporate. In another pan, cook the penne in plenty of salted water, leaving the pasta al dente, then pour them into a large pan with the mushrooms and artichokes and sauté them over a high heat.

Serve with a sprinkling of grated mature pecorino cheese and pepper.
