Fregola in vegetable broth

INGREDIENTS (4 people)

  • 200 gr. organic toasted fregola
  • 2 LT. water for vegetable broth
  • 150 g celery
  • 200 gr. carrots
  • 250 gr. courgettes
  • 200 gr. golden onions
  • 150 gr. coppery tomato
  • Black pepper (to taste)
  • Salt (to taste.)

METHOD

Wash and cut the vegetables and place them in a pan with cold water, salt and pepper to taste, and cook everything for about 1 hour. Filter the broth into another pan and bring it back to the boil, add the toasted fregola and let it cook for about 10 minutes.
