Fregola in vegetable broth
INGREDIENTS (4 people)
- 200 gr. organic toasted fregola
- 2 LT. water for vegetable broth
- 150 g celery
- 200 gr. carrots
- 250 gr. courgettes
- 200 gr. golden onions
- 150 gr. coppery tomato
- Black pepper (to taste)
- Salt (to taste.)
METHOD
Wash and cut the vegetables and place them in a pan with cold water, salt and pepper to taste, and cook everything for about 1 hour. Filter the broth into another pan and bring it back to the boil, add the toasted fregola and let it cook for about 10 minutes.
