Malloreddos represent the quintessence of Sardinian pasta. With their characteristic striped shell shape, they have brought a piece of Sardinia to every corner of the world.

Malloreddos with ricotta, saffron and mint

INGREDIENTS (4 people)

  • 300 gr. Organic Malloreddos
  • 500 gr. sheep's ricotta
  • 100 gr. butter
  • 1 sachet of Saffron
  • 2 fresh mint leaves
  • 1 glass of milk
  • Salt and Pepper (to taste.)

METHOD

Melt the butter in a pan, add the finely chopped mint, milk and saffron; finally add the ricotta and mix. In another pan, cook the malloreddos in plenty of salted water, leaving them al dente, then pour them into a large pan with the ricotta and sauté them. Serve with a sprinkling of fresh pecorino cheese and pepper.
